      1. Combine the sugar, honey, and water in a medium saucepan and place it over medium heat, stirring until the sugar has dissolved.
      2. Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 10-12 minutes, or until the mixture reaches 300°F on a candy thermometer.
      3. Remove the saucepan from the heat and carefully stir in the fruit puree, lemon juice, and orange juice.
      4. Let the mixture cool slightly, until it reaches 275°F. This is important, as it will help prevent the lollipops from becoming too hard or brittle.
      5. Add a few drops of food coloring to the mixture, if desired, and stir well to combine.
      6. Pour the mixture into a lollipop mold or onto a greased surface, such as a silicone mat or a piece of parchment paper.
      7. Allow the mixture to cool and set completely, which should take about 10-15 minutes. Once set, remove the lollipops from the mold or peel them off the surface and enjoy!
